Sogan Dolma

I (editor) honestly think and find it very hard to distinguish what is the one "must have" dish to have in Sarajevo. Many would say Burek, Zeljanica, Ćevapi, Sogan dolma, etc.

 

My favorite is Sogan dolma, famous and delicious Sogan dolma.


When you just read Wikipedia article about this dish, it is hard not to try it if you have the opportunity.


"Sogan-dolma, which means stuffed onions, is a traditional Bosnian dish, considered the specialty of Mostar. Ingredients include onions, minced beef, rice, oil, tomato purée, paprika, vinegar or sour cream, dense natural yogurt (locally known as Kiselo Mlijeko, literally 'Sour Milk'), black pepper, salt and spices.

Mostly it is prepared on the way that onion skin is being removed, layer by layer, where onion containers (tur.dolma) are used as for meat fillings. The remaining part of onion is also used, mixed with the meat and fried on oil for a couple of minutes, to obtain the base of the stuffing. To extract the separate "shirts", the entire bulbs are cut on the top and then boiled until soft enough to be piled off, layer by layer. In order to prevent a further softening and crumbling, the bulbs should be removed from the hot and put into cold water."

It is very important to explain for those "onions haters" that this dish is completely different taste than normal onion. Somehow it is sweet, so do not be worried about it, just try it.


Mostly it is being served with the yoghurt.
